Ingredients: Milk, cream, sugar, nonfat milk, less than 2% guar gum, locust bean gum, carrageenan, mono and diglycerides; strawberries (sugar syrup [sugar, water], glucose syrup, acidifier [citric acid], color); fresh cheese powder (maltodextrin, lactose, milk proteins, natural and artificial flavors, citric acid, color [caramel and turmeric]).

The trick with a cheesecake gelato is the tang. Cheesecake is not sweet cream — it is sweet cream with an acid edge, and lose that edge and you have made vanilla with a fancy name. The base here carries real cheese powder for exactly that reason, so it finishes slightly sharp instead of flat.
The strawberry runs through it as a variegate rather than being blended in: whole strawberries in a sweet aromatic sauce, swirled so that some spoonfuls get more than others. That unevenness is deliberate. A perfectly homogenous strawberry-cheesecake gelato tastes like one thing; this one tastes like two, taking turns.
It is the most-ordered flavor we carry among people who are 'not really a gelato person'.
