Ingredients: Milk, cream, sugar, nonfat milk, less than 2% guar gum, locust bean gum, carrageenan, mono and diglycerides; butter pecan natural flavor; maple variegate (powdered sugar, water, maple syrup, natural flavor, modified rice starch, caramel, xanthan gum, citric acid); praline pecans (sugar, pecans, butter [cream, salt], corn syrup, salt); caramel color.

We cannot guarantee any flavor is free of trace amounts, and the same scoops and case are shared across flavors. If you have a severe allergy, please talk to us before you order — we would much rather have the conversation.
Butter pecan is not an Italian flavor and we have never pretended otherwise. It is a Southern one, and making it as a gelato rather than as an ice cream turns out to suit it: the lower fat and the lower overrun let the pecan come forward instead of sitting behind a wall of cream.
The pecans are pralined — cooked in sugar and butter until they candy and take on a glassy shell — so they stay crunchy in a frozen base instead of going soft. Then a ribbon of maple runs through the whole thing, which is what makes people close their eyes on the first spoonful.
Tennessee grows pecans, we serve gelato beside a herd of Highland cows, and nobody has ever objected to the combination.

Does it contain nuts?
Yes — pecans, which are tree nuts. This flavor is not safe for a tree-nut allergy. See the dietary details on this page.
Are the pecans crunchy or soft?
Crunchy. They are candied in sugar and butter first, which puts a shell around them that keeps the frozen base from softening them.
Is there real maple in it?
