Ingredients: Milk, cream, sugar, nonfat milk, less than 2% guar gum, locust bean gum, carrageenan, mono and diglycerides; pistachio; emulsifier (lecithin); antioxidant (alpha tocopherol); natural flavor; salt.

Pistachio is the test. It is expensive to make properly and easy to fake, which is why so much of it is bright green — real pistachio is a dull, slightly brown-tinged khaki, and anything the color of a tennis ball got there from a bottle.
Ours is built on a proprietary blend of 100% pure pistachio butter imported from Italy. Pistachio butter is exactly what it sounds like: nuts ground until their own oil turns them into a paste. Nothing extends it, so the flavor is the nut itself — grassy, faintly sweet, a little resinous, with the salt sitting just underneath.
Sicily is where the best of them grow. The trees on the volcanic slopes around Bronte produce a longer, greener, more intensely flavored nut than anywhere else, and that intensity is the whole reason this flavor can carry a scoop on its own without help from vanilla or sugar.

Questions we get asked
Why isn't your pistachio bright green?
Because nothing was added to make it that color. Real pistachio paste is a muted khaki-green. Vivid green usually means colorant, almond filler, or both.
Does it contain nuts?

Is pistachio gelato gluten-free?
