Ingredients: Milk, cream, sugar, nonfat milk, less than 2% locust bean gum, guar gum, carrageenan, mono and diglycerides; dulce de leche (nonfat milk, sugar, glucose, soybean oil, unsalted butter, sodium bicarbonate, lactase, potassium sorbate); salt.

Caramel gelato lives or dies on the salt. Without it you get a one-note sugar rush; with too much you get a savory oddity nobody finishes. The balance here comes from starting with real dulce de leche — milk and sugar cooked slowly until the sugars brown and the whole thing turns the color of a penny — and then adding French sea salt at the end rather than cooking it in.
Dulce de leche is not the same as caramel, and the difference matters. Caramel is sugar cooked on its own. Dulce de leche is sugar cooked in milk, so it browns through the Maillard reaction as well as caramelization and comes out rounder, less sharp, more butterscotch than burnt sugar.
The salt does something specific: it suppresses your perception of bitterness, which lets the browned notes read as toffee instead of scorch. That is why a salted caramel tastes sweeter and less sweet at the same time.

Questions we get asked
Is it very salty?
No. The salt is there to sharpen the caramel, not to be tasted on its own. Most people notice it only as 'this is not too sweet'.
What is dulce de leche?
Milk and sugar cooked slowly together until they brown. It is richer and less sharp than a caramel made from sugar alone, which is why we build the flavor on it.
Is sea salt caramel gelato gluten-free?
There is no wheat in this flavor. It is made in a facility that also handles wheat and shares a case with flavors that contain it — read the dietary details on this page before ordering.
