Ingredients: Milk, cream, sugar, nonfat milk, less than 2% guar gum, locust bean gum, carrageenan, mono and diglycerides; chocolate (cocoa mass, sugar, cocoa butter, soy lecithin, refined vegetable fats [coconut]).

We cannot guarantee any flavor is free of trace amounts, and the same scoops and case are shared across flavors. Stracciatella is not chocolate-chip ice cream and it never was. The name comes from stracciare — to tear — and it describes how it is made rather than what goes in it. We start with a base of pure fior di latte, the sweet-cream heart of Italian gelato, and drizzle warm chocolate across it while it churns. The chocolate hits the cold and hardens on contact, and the paddle tears it into thousands of paper-thin slivers.
That is why it melts the way it does. A chocolate chip stays a chip in your mouth — cold, waxy, separate. A stracciatella shard is thinner than a chip has any right to be, so it gives way at body temperature and releases the chocolate across the whole spoonful instead of in one lump.
It is the flavor we reach for when somebody says they do not know what to order, and it is the base of the Brogato® — two scoops with a fresh-pulled crema espresso poured over the top.

Questions we get asked
Is stracciatella the same as chocolate chip gelato?
No — and the difference is the reason people order it twice. Chocolate chip is made by folding solid chips into a finished base. Stracciatella is made by drizzling warm chocolate into churning gelato so it freezes into thin shards. The shards melt on your tongue; the chips do not.
What does stracciatella taste like?
Sweet cream first, then chocolate — in that order. The base is fior di latte, so it reads as milk and vanilla rather than as a chocolate flavor with something added to it.
Is stracciatella gluten-free?
There is no wheat in this flavor, but it is made in a facility that also handles wheat and shares a case with flavors that contain it. See the dietary details on this page before you order.
